I missed my recipe post on Monday thanks to the plague that took over my body this weekend, so I decided to skip this week’s Plate to Pixel and focus on the food. I’m gonna guess that’s alright with you!
I am really trying to savor these last few moments of summer, and that’s saying something considering the 90s+ temps we’ve had this year. I’m usually all ready to rush into fall weather, but this year I’m feeling a bit more nostalgic for the long days and killer produce. The month of August will be largely devoted to tomato and corn consumption. Corn on the cob, corn and bacon hash, tomato sandwiches, and piping hot BLTs are all on my to do list.
They’ll also be lots of salad. And I’m talking simple salads that use whatever we have on hand, get dressed right in the bowl, and are ‘layered’ so to speak. Here’s the breakdown: fill a large bowl halfway with arugula or whatever greens you have on hand. Pour a generous glug of olive oil in the bowl, the juice of a 1/2 a lemon and sprinkle with enough sea salt and freshly ground pepper so you lightly coat the top of the leaves. Mix well with your hands. The leaves should be glistening and the dressing bright and punchy. Then layer in whatever else you have on hand- corn straight off the cob, radishes, tomatoes, fresh herbs, cucs, or shaved carrots- and mix well after each addition. Taste for seasonings and add more lemon juice or salt if it needs a bit more kick, and more olive oil if the ingredients aren’t evenly coated. Top with a few shards of sharp parm and serve immediately. I’m gonna trust you don’t need a recipe for this one. Let’s just go for it, shall we?
