Brownies and A Saturday Night In

Saturday we had an unexpected night in, which in my mind is pretty wonderful from time to time. I spent a few hours reading and then whipped up a batch of brownies. I like a really fudge-y brownie, and these are just that- made so with the addition of Mast Brother’s chocolate. I added peanut butter at the end because I just couldn’t resist. It’s actually honey roasted peanut butter. Have you guys tried that? It is dangerously delicious! I don’t think I’ll ever be able to go back to normal peanut butter now.  You could, of course, use the regular peanut butter, or even peanut butter chips- all of the above would deliver a fabulous brownie. Double Chocolate Peanut Butter Swirl Brownies adapted from All Recipes

  • 1/2 cup salted butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/3 cup semi sweet chocolate, roughly chopped (or chips)
  • 2 eggs, beaten
  • 1/2 cup flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 5 T peanut butter

Preheat the oven to 375 degrees. Grease and flour and 8×8 inch baking pan.

In a small saucepan melt the butter over low heat.  Once melted, add in the chopped chocolate and stir to combine. Remove from heat and stir in sugar, eggs, and vanilla.

In a separate bowl whisk together the flour, cocoa powder, and baking soda.  Pour the chocolate and butter mixture into the bowl and stir well to combine. Pour the batter into the prepared pan and lightly shake the pan so the batter is evenly distributed. Place the peanut butter in a small bowl and heat in in the microwave until runny (about 30 seconds). Drizzle evenly over brownies batter. Gently run a fork back and forth across the brownie to combine slightly.

Bake for 25- 30 minutes until a toothpick or cake tester comes out clean. Cool for 20 minutes before serving.

    • Yes, roasted! It’s honey roasted peanuts that are ground into peanut butter. You have to try it!
