Five Fabulous Winter Salads

While I’d kill for fresh cucumbers and tomatoes year round, I find it kind of fun to experiment with salad ingredients during the winter months. On Sunday night, I threw fresh wedges of grapefruit into our salad (and even used some of the juice in the dressing), and last night I made an apple, fennel, and feta salad, and dressed it with an apple cider vinaigrette.  I have a close friend whose family’s signature Thanksgiving salad includes pomegranate seeds! I’m dying to try that, too.

To help keep me creative with my winter salad creations, I pulled together five great salads featuring ingredients available during the colder months. Have you guys made any of these?What do you put in your winter salads? I’d love to hear your thoughts!

Shaved Brussels Sprout Salad with Pineapple Poppyseed Vinaigrette How fabulous does this sound? Joy’s recipe is so creative, it makes me want to get in the kitchen and make this right now!

Roasted Pear Salad with Goat Cheese and Fig Vinaigrette  If you’re ever in need of a salad recipe, Dana has close to 50 amazing ones on her blog! She’s a total salad guru, and this pear one sounds absolutely delicious- not to mention perfect for a dinner party.

Roasted Butternut Squash Salad with Warm Cider Vinaigrette  I have been meaning to make this recipe from my Back to Basics cookbook for months, and hopefully this winter I’ll finally get around to it. The maple roasted butternut squash, alone, sounds amazing.

Shaved Fennel Salad In college I waitressed at a restaurant where they served an apple fennel slaw.  It was so good! I think you could quickly recreate it by adding a flew sliced granny smith, pink lady, or honeycrisp apples to this fennel salad.

Roasted Cauliflower Salad Melissa Clark is just so helpful! In this article she shares tips for weaving roasted vegetables (and whatever else you have on and), into a gorgeous salad.

Ps: An Avocado and Grapefruit salad I made earlier this year that would be perfect for winter.

  3. I LOVE fennel salads!! Crave them all year ’round and can’t wait to make the first one of the year. I’m having a hard time getting into fall fruits and veggies this year, so I’m trying to compensate by putting a few of them in a wheat berry/farro/barley salad with an autumnal vinaigrette … we’ll see if that works!
